Ginger grows untamed all over the Big Island, but on our farm we tend to the tender roots of the edible ginger variety, by carefully harvesting only the most delicious parts at just the right time. This jam is full flavored, but not overpowering. It is wonderful with pork and chicken. We like to slather Ginger Jam on a chicken before roasting. Use it as part of a marinade or glaze the next time you cook on the grill.
Ingredients: Ginger, Chayote, Splenda, Lemon Juice, Pectin
